There are some excellent restaurants here in Oregon, and some even attract the attention of food critics all over the country. Most of those glossy, trendy spots are in our larger cities, but there’s one little bistro in a tiny town that has garnered praise from all over the world, and you’re going to want to plan your visit asap.

Sammy’s New Cowboy Bistro got its start in 1989. Owners Charlene and Vernon Rollins named the restaurant after their young son, Sammy, and it was a humble affair in the beginning, but it’s become a world-famous restaurant.

Charlene’s talent as a gourmet cook, and Vernon’s expert wine knowledge and huge wine collection garnered attention from the many Shakespearean Festival visitors in nearby Ashland.

Over the years, it’s stayed very small, with just a few tables, and its hours have decreased to just a few afternoons and nights a week, but the dining experience here is still absolutely amazing.

Everything on the menu is seasonal, and locally-sourced. On the lunch menu, you’ll find one of the most delicious burgers in all of Oregon. It’s a simple, grass-fed burger graced with goat cheese, applewood-smoked bacon and spinach.

The dinner menu varies by season just like the lunch menu. You’ll find just two entrees on the dinner menu, and they’re carefully created with only organic ingredients.

It’s important to the owners that all of their meat is humanely-raised, so it typically comes from small, local farms with the same ethics.

While the dinner menu is small, the dessert menu is extensive. Choose from six decadent desserts, ranging from a chocolate layer cake to a pistachio torte. The desserts are all made with fresh farm eggs from pastured hens and organic dairy and chocolate.
